Titre anglais : Diversification of cassava starch and its possible uses in food industry

Résumé : La yuca ¨Waxy¨, variedad AM 206-5, libre de amilosa, fue reportada en 2006 en el proyecto de mejoramiento de yuca del CIAT, que busca desarrollar genotipos con características especiales en el almidón presente en sus raíces. Los almidones libre de amilosa tienen diferentes propiedades fisicoquímicas en comparación con los que contienen amilosa, y por lo tanto se utilizan para la fabricación de diferentes productos en la industria alimentaria. El objetivo de este trabajo fue clasificar genotipos de yuca mediante el contenido de amilosa (alto y libre) y tamaño de granulo del almidón (normales a pequeños). Se evaluaron 880 genotipos descendientes del cruce de la variedad de yuca AM 206-5 (libre de amilosa) y la variedad 5G 160-13 (granulo pequeño). El contenido de materia seca osciló entre 7 % y 47 % con un promedio de 35 % y el contenido de amilosa vario entre 0 % y 42 %. Se obtuvieron 6 genotipos doble mutante con las dos características combinadas (waxy y granulo pequeño). De los 880 genotipos evaluados se obtuvieron 145 con las características waxy y 110 con tamaño de granulo pequeño. Los almidones se analizaron en términos de sus propiedades morfológicas, funcionales y fisicoquímicas: tamaño y forma del granulo, claridez, comportamiento de los geles a través del calentamiento, enfriamiento por (RVA) y contenido de amilosa. El almidón waxy presentó la mayor temperatura de gelatinización, y mayor claridez, este tipo de almidones son menos sensibles a la retrogradación lo que los hace atractivos para la industria de alimentos congelados y refrigerados ya que su vida útil será más larga, el almidón de 5G 160-13 presentó menor claridez, y por su tamaño de granulo son más fáciles de hidrolizar para la obtención de etanol esto sería de gran interés para la industria de biocombustibles y edulcorantes.

Résumé (autre langue) : The waxy cassava variety AM 206-5, free amylose, was reported in 2006 in the cassava- breeding project at CIAT, which seeks to develop genotypes with special features in the starch in its roots. The free amylose starches having different physicochemical properties compared to those containing amylose, and therefore are used for manufacturing different products in the food industry. The aim of this study was to classify cassava genotypes by amylose (high and free) and starch granule size (small and normal). 880 offspring genotypes from crossing the variety of AM 206-5 (free amylose) and cassava variety 5G 160-13 (small granules) were evaluated. The dry matter content ranged between 7 % and 47 % with an average of 37 % and various amylose content from 0 % to 42 %. were obtained 6 double mutant genotypes with the two combined features (waxy and small granule). From 880 genotypes were obtained 145 with features waxy and 110 with small granule size. Starches were analyzed in terms of their morphological, functional and physicochemical properties: size and shape of granule, claridez, solubility and swelling behavior of the gels through heating, cooling (RVA) and amylose. The waxy starch has the highest gelatinization temperature, and greater claridez, such starches are less susceptible to retrogradation which makes them attractive to the industry frozen and refrigerated foods since its lifetime will be longer, starch 5G 160-13 showed lower claridez, and granule size are easier to hydrolyze to obtain ethanol this would be of great interest to the biofuels industry and sweeteners.
