Résumé : Le kitoza est un produit carné traditionnel qui occupe une place importante dans les habitudes alimentaires et la culture malgaches. Des enquêtes ont été menées auprès de producteurs de kitoza. Des échantillons ont été récoltés aux différentes étapes puis ont été analysés. La réingénierie du procédé a été mise au point pour chaque étape critique. L'étude que nous avons menée sur la fabrication de kitoza auprès de différents producteurs dans la province d'Antananarivo à Madagascar nous a permis de caractériser le processus de fabrication, de connaître la qualité du kitoza et de relever un certain nombre de points critiques. Les étapes du procédé sont la découpe en lanières, le salage et le fumage. La technique de fumage est différente pour chaque producteur. Le kitoza appartient à la catégorie des aliments à haute humidité. Il présente une teneur élevée en protéines et n'est pas fermenté. Les échantillons de kitoza ayant subi la combinaison des opérations unitaires de cuisson, de séchage et de fumage ont présenté des teneurs élevées en B(a)P. Les analyses microbiologiques ont révélé qu'au cours du procédé, la concentration de la flore totale et Escherichia coli était élevée mais que dans le produit fini, la concentration de la flore totale était acceptable et aucun germe pathogène n'a été détecté. L'identification des souches de staphylocoques à coagulase négative à partir des produits finis séchés et fumés a montré que Staphylococcus saprophyticus était l'espèce dominante. Bien qu'aucune maladie ou nuisance n'aient été imputées à la consommation de kitoza, une réingénierie du procédé traditionnel a été entreprise en vue de l'amélioration et le développement de la commercialisation du produit. La réingénierie du procédé a été axée principalement sur le fumage pour obtenir les mêmes caractéristiques que le produit traditionnel tout en ayant une teneur en B(a)P conforme aux normes. Différents essais de traitement au bois ainsi qu'au charbon et à la sciure ont été testés. Les opérations unitaires de séchage/cuisson et de fumage ont été découplées lors des traitements au charbon et à la sciure. Il a été démontré que les procédés sans bois garantissaient une faible teneur en B(a)P. La technique a été mise au point localement en utilisant du charbon pour l'étape de séchage/cuisson et des copeaux de bois pour le fumage. Les caractéristiques physico-chimiques et sensorielles étaient conservées mais la teneur en BaP était faible garantissant la sécurité de l'aliment. Les analyses microbiologiques des produits réingéniérés ont montré que la concentration de la flore totale et des bactéries lactiques était acceptable. Ce taux était stable à +4°C jusqu'à 8 jours mais il augmentait au cours du temps pour les kitoza conservés à la température ambiante. Aucun germe pathogène n'a été détecté quels que soient le mode et la durée de conservation. Les tests sensoriels ont montré que le produit amélioré était apprécié par les consommateurs. Un guide technique a été élaboré pour vulgariser la technologie.

Résumé (autre langue) : Kitoza is a traditional meat product that plays an important role in malagasy eating habits and culture. Surveys were conducted with kitoza producers. Samples were collected at each step of process and then analyzed. The process reengineering was developed for each critical step. The study we carried out on the manufacture of kitoza with different producers in the province of Antananarivo in Madagascar enabled us to characterize the manufacturing process, to know the quality of the kitoza and to identify a certain number of critical points. The steps of the process are cutting into strips, salting and smoking. The smoking technique is different for each producer. Kitoza belongs to the category of high moisture foods. It has a high protein content and is not fermented. Kitoza samples having undergone the combination of cooking, drying and smoking unit operations showed high B(a)P contents. Microbiological analyses revealed that during the process, the concentration of the total count and Escherichia coli was high but in the fianl product the concentration of the total count was acceptable and there wes no pathogenic bacteria were detected. The identification of strains of coagulase negative staphylococci from dried and smoked finished products showed that Staphylococcus saprophyticus was the dominant species. Although no illness or nuisance was attributed to the consumption of kitoza, a re-engineering of the traditional process was undertaken with a view to the improvement and the development of the marketing of the product. The re-engineering of the process was mainly focused on smoking to obtain the same characteristics as the traditional product while having a B(a)P content in accordance with the standards. Various wood processing tests as well as coal and sawdust were tested. Unit operations of drying/cooking and smoking were decoupled during coal and sawdust treatments. It has been demonstrated that wood-free processes ensure a low B(a)P content. The technique was developed locally using charcoal for the drying/cooking step and wood chips for smoking. The physicochemical and sensory characteristics were retained but the BaP content was low guaranteeing the safety of the food. Microbiological analyzes of the reengineered products showed that the concentration of total count and lactic acid bacteria was acceptable. This level was stable at + 4 ° C up to 8 days but it increased over time for kitoza kept at room temperature. No pathogenic bacteria were detected whatever the mode and the shelf life. Sensory tests showed that the improved product was appreciated by consumers. A technical guide has been developed to popularize the technology.
