Résumé : The present study tries to develop an analysis on the agriculture in Sergipe evidencing the productive chain and the importance of the small cheese dairies in benefitting her cattle milkman's creation. They are considered a reproduction strategy objectifying the increase of income with a production of cheeses: of coagulum, curd, the butter, appearing in the last years the pré-cooked and the mussarela.; Those units of production are installed mainly in the rural zone and, in smaller incidence, in I spill it of the municipal thirst. Harnessed to the production of cheeses they develop the creation of pigs that contributes sensibly to the growth of the activity subsidizing in the difficulties and representing a saving for the family. The territory of the small cheese dairies constitutes a space where you/they were adapted the knowledge culturally and historically rooted in the municipal district through the family liaisons, being the family a big one exciting, beside the neighbors' support. Due to that reality, the persistence of the family unit was verified that looks for in that strategy to continue producing in the earth being used of that activity rooted in the history of the municipal district, for the complementation of income, a lot of times constituting its main income. In spite of the problem that you/they come those units of production they integrate rural producers, contributing in its fixation in the earth, assuring them weekly income.
