Résumé : In the State of Sergipe, the biggest production of milk derivatives, is concentrated in the half-barren region, with prominence for the cities of Nossa Senhora da Gloria and Aquidabã. The success of the activities milk and cheesemaker, can be attributed to the existing interactions between the processes of integrated informal production and processing to the regional market, The interactions found in this region constitute a specific system, and with proper particularitities, and can be considered as systems of organizations of producers and services associates for the characteristics and its functioning to the one specific territory. The small milk producers of the region, drain its volumes of milk for the informal units of processing, called of fabriquetas or queijarias., responsible for the transformation of the regional raw material in derivatives. Much even so exerts a great importance in the economy of the State, these informal units of agricultural processing presents a series of difficulties. The research was lead in the informal units of processing of milk derivatives or small factories of the cities in question, with estratificada sample of the definitive small factories the mapping of the small factories in the State of Sergipe (Menezes, given 2001).
