Titre anglais : Demand analysis of the agri-food chains of chuño and tunta in the central altiplano of Bolivia

Résumé : The drastic weather conditions in the Altiplano compel farmers to grow bitter potatoes which must be processed before their consumption. People in the area have processed potatoes traditionally for centuries. Potatoes are frozen and dehydrated naturally and traditionally to obtain the processed products: chuño and tunta. These two products are a local alternative to improve the added value of the potato crop and are the main staple food of the rural population in the highlands of Bolivia. The PROINPA foundation, institution of research and development of andean products, carried out this study on demand analysis of the agri-food chain of Chuño and Tunta with the objectives to characterize the actors, identify the limiting factors and the opportunities of this agri-food chain as well as demands for technology innovation. This study contributed in defining better the economic and social importance of these traditional products and characterizing the actors involved in this segment of the potato agri-food chain. The study analyzed the existing flows of products and money between the actors and identified the commercial relationship between them. The internal and global performance of this agri-food chain was analyzed in terms of efficiency, quality and competitiveness identifying also the limiting factors. This study allowed also to identify demands for technology innovation. It will be used as the starting point for further participatory analysis of potential business opportunities with the food chain actors.
