Titre anglais : Located agro-alimentary system of bitter starch production of cassava in the departement of the Cauca - Colombia

Résumé : Along the Panamericana Highway in the Cauca department of Colombia, there is a concetration of 210 agro-industries that produce bitter starch of cassava, commonly named "rallanderias". The people from this region are from a variety of ethnic groups and scarce economic resources, where small holders is the predominance and they live mainly of agriculture and the production of cassava starch. The extraction of cassava starch begun in the 1940's as a domestic activity between the women using home equipment for bakery products. During the 1950's, the extraction of cassava starch became mainly an artesian industry, with the objective of satisfying the local demand. In the 60's and 70's, the first technology innovation where developed by the producers for the mechanization process and increase the number of agro-industries. Then, in the 80's begun the institutional support to this agro-industrie with the objective to improve the traditional process of bitter cassava starch in a small scale. Now, these agro-industries produce approximately 11.000 tons/year of cassava starch, that represents the 80% of the total production in the country. There is a weak trade union force in the rural agro-industries that impulses the producers to make them more competitive and productive, but there is a meaningful advantage like the how-to do and the collective actions, like the Cooperativa Agraria de Productores de Yuca y Almidon de Yuca del Cauca "COPRACAUCA" and the cassava production committee "PROYUCA".
