Résumé : Under the RELMA project coffee appellation project, 4 pilot zones have been selected for the renowned quality of their coffee production: - Kenya: Nyeri and Kirinyaga Districts, - Uganda: Mt Elgon (Arabica) and Kalangala Island (robusta), - Rwanda: Lake Kivu. The objective of the proposed consultancy was to assess the quality of the coffee produced, not to contest it, but rather: - to provide a fine description of the taste of the coffee produced and, after comparison, to evaluate its possible specificity, - to evaluate the degree of homogeneity or heterogeneity of the production, to give a possible explanation for such heterogeneity, - to evaluate the possible geographical unity of the selected area. The consultant was to conduct a comparative liquoring session with samples collected from the chosen areas. He would be responsible for the hulling and roasting of the provided parchment sample and would ensure a reliable protocol for liquoring. This session would be conducted in collaboration with the quality laboratories of National Institutions; Liquorers from other institutions -public or private- would be invited to participate. The following was expected from this consultancy: a) an evaluation of the taste and aroma diversity of the tested coffee and a tentative explanation of such diversity, b) an evaluation of the possible specificity of the coffee(s) tested, its or their "uniqueness", and then, the drafting of a book of specifications concerning those coffees, c) establishment of a link with the local liquorers for a common understanding of European standards. If and when possible, training activities might be included in the cup testing session, d) the production of a final report presenting the results obtained. This report is in three sections, one for each of the countries visited.
