Résumé : This study falls within the continuity of a project dealing with the evolutions of livestock farming systems. We introduce the concept of relational flexibility, a concept resulting from management sciences, and try to find out in what way it could help to produce new ways of analysing farming systems. Some surveys were carried out in five commercial companies and then in 15 beef cattle farms. We showed the reality of a relational flexibility of farming systems, based on the relationships between the farmers and the purchasers of the animals. It combines internal flexibility (playing on the product type and the production process) and external flexibility (the type and the number of purchasers, as well as the relation established with them). The stockbreeders have different strategies to face up to risks, either preferring to work with a single purchaser, or multiplying the number of purchasers.
