Résumé : In this chapter, we analyse the processes of specialisation and diversification of food systems in the southern Brazilian state of Santa Catarina. For a long time, this state was known for its unique dynamics of development based on a balanced distribution of consumption centres (secondary cities) and local production systems spread throughout the territory.
