Résumé : NaDES or Natural Deep Eutectic Solvents, can be defined as a molecular arrangement of primary metabolites, suspected to have a biological and/or physiological role in living organisms (Choi et al., 2011; Durand et al., 2021). The concept of NaDES is relatively new (~2011), and its potential is highly promising due to its unconventional characteristics when in a liquid state at ambient temperatures. Despite its numerous advantages, the use of this type of mixture in food technology presents significant challenges and requires further research to fully understand the mechanisms of action. Regarding its application in improving the oxidative stability of food, NaDES has been explored for its intrinsic antioxidant properties, as well as its potential as a solvent for the extraction, modification, or formulation of antioxidants like phenolic compounds. Furthermore, NaDES has the potential to alter the microstructure of food matrices, which could create barriers that inhibit contact between lipids and pro-oxidants, thereby reducing oxidation rates. Here, we propose to review our work over the past decade to shed light on both the potential and the challenges of implementing NaDES in food applications, with a focus on its ability to enhance antioxidant effects and improve oxidative stability.
