Résumé : The used strategies to conserve in situ the agricultural biodiversity tie the natural conservation with the sustainable human use. The agricultural producers and their customs are fundamental. The necessary measures depend on the type of biodiversity in relation to the traditional production systems. It implies knowledge in as much cultural production, created in the social interactions that is social representations. Significant, linguistic and symbolic construction, that through autonomiza time and becomes social thought, adviser of psycho-social processes that guide the social behavior, communication and relations. It interests to us to include/understand the culture farmer in relation to the production and gastronomy of quinoa, pre-Hispanic culture with genetic diversity, high resistance to hydric stress. Producers of the Commune of in center South Walls of Chile, inhabitants of rural enclaves of the coastal dry land, maintain land productive and gastronomical inherited of their grandparents practical because they value this culture as a component of cultural identity and projects their commercialization in the new scene in their recent integration to the global connectivity.
