Résumé : This report aims at making a diagnostic of the banana supply chain from the production of banana fruits to the delivery at the factory in Sigatoka, given a contrasted situation between eastern and western side of Fiji. The second chapter aims at making a complementary diagnosis of the process of aseptic banana puree production in the factory of AGRANA FRUIT FIJI, with emphasis on the different unit operations. The last chapter aims at discussing and suggesting recommendations for the improvement of the current situation of production of organic aseptic banana puree (ripening, conformity of maturity, oxidation control, and retrogradation). It could constitute a basis to structure a global action plan from the field to the final BIB end-product. The defects of quality observed on banana puree in AGRANA FRUIT FIJI are often due to the difficulty to obtain sufficient amount of raw material with acceptable quality. We suggest to organize trainings to farmers to help them to revise their technical itineraries, and thus to limit physiological disorders (by necrotic leaf removal, full bunch transport, tagging fruits). AGRANA could consider the opportunity of investing in disease-free vitro-plants conducted under improved organic practices. A trainee could also be involved in the determination the optimum physiological age for harvest of the different varieties to provide homogeneity of fruit maturity at arrival to the factory. Moreover, sorting and discarding has to be stricter at every stages of the process. The temperature for storing has to be lowered prior to revise ripening conditions assessed by an objective ripening indicator. It will help to obtain a more homogeneous ripen pulp quality for processing. Avoiding pollution and size of conveyors, removing useless buffer tanks, providing nitrogen bubbling, setting the pre-heating stage between 50 and 60°C before refining, lowering refiner screen size and increasing speed of cylinder could further contribute to an improved quality of aseptic banana puree.
